Since I am a minority (70-30) in my area, Latino to whitey, skirt steak is very much in demand here. You usually pay a premium for it because it is such a mainstream component of the Latino diet. Every now and then you can find it on sale.
As mathman said, grilled whole, sliced against the grain. Believe me, it doesn't have to taste like ass.
