assemble ingredients

brown pearl onions in butter and oil

select a red

i didn't have rind bacon so had to make do with packaged, sliced bacon. fry it up.

brown meat in batches (i chose prime sirloin)

sauté onion and carrot

add meat (beef and bacon back to pot)

brown mushrooms

add equal parts beef stock and wine to cover meat

bring to boil on stove top

cover and place in oven to finish on low/slow. when meat is tender, remove to platter. strain broth/gravy. serve with buttered noodles, rice or real mashed potatoes and vegetable of choice.

I put it in low and slow. I think it was 275 for 2 1/2 hours. The meat was tender, as it was prime sirloin.

Some good, white dinner rolls with lots of butter would work great for cleaning up the plate.

I have never cared for sawdust and other ingredients that result in a bread product that takes two men and a boy just to lift. smile
