Corn salsa is good. We also make an avacado, tomato, red onion, jalapeño, cilantro and mango salsa for fish tacos that’s amazing!

A guy made that at work, and now we make it at home. He added some cooked beans too. Good for summer

You can also make a light vinegar based dressing/coating that adds a bit of zing and freshness...

Make ours with grilled and smoked ears of corn.

Also like to add in roasted red peppers, jalapeños and cotija cheese.
