Have about two cups of left over grilled chicken, and am going to make some soup.
Am thinking a minestrone type of soup.
Onion, bacon crumbles, Zuc. stewed tomatoes, shell noodles, beef broth, etc.
Any ideas? Thanks!

But I use left over roasted chicken with ramen noodles cooked with "Better than Bouillon" seasoning, adding green onions, carrots, mushrooms, celery and bok choy (sometimes I add red chili powder for a bit of kick). Kinda a faux Pho.
"Better than Bouillon" is good stuff, use the chicken and the beef. Chicken dumpling soup?

I decided to go ahead and make soup with my left over chicken.
It turned out pretty good! Recipe to follow:
2C diced, broiled chicken
1/2 cup bacon crumbles
I can stewed tomatoes
2 cans broth, one chicken, one beef
1 can white beans
1 Zuc. sliced and quartered
1/2 large onion, diced
2 stalks celery diced
Spices;
1 tsp fresh diced Rosemary
1 tsp. fresh ground black pepper
1 tsp Jane's season salt
1 frozen cube garlic
1 frozen cube basil
I grilled the onion and celery in bacon grease, added the rest of ingredients, brought to a low boil, then simmered for two hours.

how do you slice AND quarter something?

You could slice it, then quarter them.
Or you could quarter it, then slice them.
I quartered THEN sliced, sorry for the confusion. (and, the "slices were about a quarter inch thick!) Grin!
