Last winter I canned 35 quarts of venison/pronghorn. I'm digging it for stroganoff. Cook the egg noodles, drain and set aside. Drain the canned meat. Saute and onion. As it's getting close to done, add a can of mushrooms, a large can of cream of mushroom soup, 8oz of sour cream, and the drained meat. Once hot, add the noodles, mix well and salt and pepper to taste.

How do you guys like to use your canned venison?
Soups, stew, chili, hash, over rice, spaghetti sauce, tacos, burritos, shepherd pie, pot pie, dirty rice, goulash - pretty much anywhere you would use ground or diced meat, but you get to skip the browning step. Suppose you could even use it instead of chipped beef in SOS, but I wouldn't!

Also really good in a sandwich or cracker spread - run it thru food processer with your choice of "food glue" (mayonnaise or salad dressing) and seasonings (dill pickle, mustard, spices, ...)
What mike said. We use it in lots of stuff.

One of my favorite ways is to saute some onion, peppers, carrots and celery until soft then add a can of either stewed or diced tomatoes and a can of deer meat. Let it simmer until its thickened to a consistency you like then serve over rice.
