It appears the grain is running lengthwise in a number of the pieces.

Any particular reason it was cut that way?

Good eye- there was two slices that were cut right at the point/flat junction before separation.

That’s a combination of using someone else’s dull-as-[bleep] knife and a whirlwind of people coming through and tearing/grabbing food from the board.

Jud.. I didn’t make one I was just there hazing/drinking then eating it the next day. I did give him $hit about the pic cause that wasn’t a very photogenic brisket at that point…

Truthfully it was one of the better briskets. And that knife wouldn’t cut a block of tofu. And there was 20 hands grabbing and tearing at it…

Right? My retarded brother cooks his briskets the same way. All off temp according to the coat hanger. Wonders why it tastes like dried out crap.

You cook brisket with a probe tells me you have no clue how to cook brisket. Here is a few pro tips….

Wrap when the fat renders. If you want to wrap.

Pull when she feels like entering a wet box.

End of pro tips.
