Going to smoke some salmon tonight. I am doing nothing fancy, just a little light rub, apple wood and about 30 minutes on the smoker (til it flakes easily with a fork). Planning on that and a salad, maybe some rice.

Smoked some salmon last night, I used a very light dusting of Butcher's BBQ rubs (Honey, Sweet Chipotle, and All purpose rub). I used apple wood and smoked it for about 40 minutes total. We ate the bigger piece before I remembered to take a picture.

They are bony BUT leave it to the Japanese they make bone tweezers. I keep a couple in the drawer and and when I have my smoked carp with my eggs in the morning I split it and pick the bones, well worth the effort.

A lot of folks skip the brining and slow low temp smoking so they end up with grilled fish

Here ya go Richard, fresh springer, brine is coarse kosher salt, white sugar and brown sugar, in the beer fridge for 3 days.

First batch doneπŸ‘, like most meat/fish I go by feel, when cannin smoked fish you don’t want it completely smoked or it’ll be like cardboard in the jar. πŸ‘ŠπŸ»
