Looks awesome. Going to BC in August to visit the grandkids. Gotta make sure I put enough cushion in the budget to bring back some salmon candy - a lot.

Yes. Smoked salmon. It turned out great.

1 C salt
2 C sugar
1 Gal H2O
90 minutes brine.
Kudos to Sitka deer.


Form pellicle and smoke to preference. I used the Big Chief.

I had always struggled with brine concentration vs time until artsy gave me the “secret”.
