Anybody do it or have a good recipe. My Mother used to make some kind of sandwich spread from boiled tongue and I hated it. I'd like to re-visit that adventure and come up with something more palatable..

Tough (no pun intended) piece of meat to work with, but sublime when done well. Rare and thinly sliced, please!

Never smoked one.


Boiled and made into tacos.


Cooked low and slow over charcoal and smoke wood......chopped up with onion, pickle, SPG and mayo would make a good sandwich.

Have tried cooking them on a exhaust manifold?? Delicious

Never had smoked tongue but for us the pressure cooker has been the best - about 45 minutes and it is tender, shredded for tacos or sliced for sandwiches.

Never smoked one, but have done lots of Basque-style marinated tongue. I love that. Can be made into a great sandwich as well.
