I used to go to a restaurant that served 'tater peals with gravy on them.

They left lots of 'tater on the skins. Pretty darn GOOD!!!!

I wash the potatoes really well so that when I peel them, I can use the peels as part of the veggies that get boiled for vegetable stock.

Leaves em on the potatoes and eats em.

Pet, or animal feed is a likely answer, I've read they feed citrus pulp to cattle.

Cows are capable of eating a lot of waste shiit. Just mix it with corn silage and some chopped hay

There are no peels.
No 5000 Latinos peeling potatoes.

The skins on fresh dug potatoes are so thin as to be non-existent.
They are tumbled in something like a cement mixer, with water,and the skins
are rubbed off.
