Bread making, especially great bread is a skill everyone should master. I make all of my own bread myself, the one that I have always wanted to make and have not yet is Sourdough Bread.

Every time I look at the recipes online, I get overwhelmed by the amount of work that goes into it. Any recipe and tips you would like to share would be cool?

I made this Italian Focaccia Bread on Saturday with Caramelized Onions, Brie Cheese, and Basil stuffed with Kalamata Olives, I put High-quality Parmigiano-Reggiano Cheese and Rosemary on top. It was pretty good.

Every woman loves a man with a very large skillet! hehehe

Actually bread is fairly easy. I got tired of store bought bread bread and my wife wanted bread without a lot of chemicals in it. Back when I was living pretty much off the land id take Wednesdays and bake bread and schnecken for the week. It was time to get back into it. I have two recipes that are my gotos now. Bother are long proof no kneed breads, rye w/caraway and white. Being long proofs I can mix them either in the morning and bake them at night or mix them at night and bake in the morning. My wife is pretty picky and never liked store bought rye but loves this bread..
Today's sourdough. I cooked it on the lighter side because my wife requested a lighter crust, because she has a cold/sore throat, almost like French bread. I actually prefer a darker loaf with the crunchy ear, and that is what I make the most.
This is white, but I do rye, or poppy seed, or white garlic rosemary a lot. I prefer sourdough, but I'll also do yeast bread if I don't have the time. I generally like to proof sourdough a couple days for deeper flavor. 80% hydration, so i do a lot of folding to get strength.
