Basic stocks are all made. Collards are cooked and black eyed peas just went into the smoked ham stock. Pork will go on in about 4 hours for the overnight cook. Sides will include mac & cheese, scalloped or mashed potatoes, green beans, creamed corn, baked cinnamon sweet potatoes, pickled okra, bread & butter pickles, green tomato relish, hot pepper vinegar and of course piping hot cornbread. Also got 4 dozen fresh Carolina oysters as an appetizer. May steam those on the cooker.

It's a great time to take everything food-wise from the holidays (total family) and prepare for Winter. There will be 10 of us (and some stragglers) for New Years Day. Best of all I get 8-12 leftover frozen MRE's. Comfort food freezes as well if not better than anything out there.
