I like golden dipt brand fish fry mix. It is a real light flour like mix. For a little extra crunch I mix two parts of the mix with one part of corn flake crumbs. Still a light coating but a lot more crunch. I dust in plain flour into milk and egg then into the fish fry mix.
I buy a tempura flour like this one [Linked Image]

down the Asian market. I put some dry in a bowl, and I mix some with club soda in a thin batter - wet bowl. I put a little Italian seasoning or Old Bay in the batter and roll, dip, and fry. I fried 2 two pound bags of shrimp for the guys during each of the Bruins playoff games. Everyone liked them. I've bought bags of flour mix for quite a few people. I think it's got rice flour or rice starch mixed with the regular flour. I look through the brands for one without MSG, and I've tried a few. All have been good.

ding ding..winner winner shrimp dinner!! That's what I use it makes a very light batter that doesn't hide the shrimp flavor. Now if you are buying those farm raised imported shrimp, a heavy batter with lot's of spices might be warranted!! eek


Louisiana Shrimp Fry is the one I like best.

Batter? I would NEVER use batter. Lightly breaded, yes, batter, no way.
I think tempura, done properly, is a light batter.

That's what I use, or something similar I suspect. My brother turned me on to it, having spent a long time in Asia many years ago. I use it mostly for deep frying oysters.
You cook your oysters?
Sometimes, then douse them in lemon juice and hot sauce...nice variation.
