My son called today. He is out of town, his GF was at their shop working, but she has a cold and feels bad. I told the lad that I had things under control.
I brought out a 4 pack of chicken thighs, picked up some fresh carrots and celery, mushrooms and herbs, and got to work.
Took over a half gallon of Cream of Chicken with Rice soup. Bowls, spoons, some Lacroix Lime water and a salad for her lunch. Perked her up. The soup was killer good. I kept half a gallon for my lunches this week.
This is how I put it together. There are a hundred different ways to make soup. It's easy, and you don't need recipes. For flavor and seasoning, I used fresh chopped Basil and Oregano. White pepper and Kosher salt.

4 chicken thighs, boiled with diced carrots, onions and celery. Cook until almost done. Remove the chicken and shred the meat. Drain the stock, saving the vegetables and reserving the liquid.
Heat two tablespoons butter and one of Olive Oil, When melted, add 4 tablespoons flour. Stir until slightly browned. Add in 4 cups of the saved chicken broth, and three cups milk. Stir on medium heat until the soup starts to thicken.
Add in the shredded chicken meat, a can of chopped mushrooms, and the saved vegetables. Add in chopped fresh herbs. Season with white pepper and salt.
Cook until the soup has thickened and you have adjusted the seasonings.
Add in two cups cooked rice, and mix well.

Looks good Sam. My Father and his best friend, our Dr./GP that delivered all five of us, prescribed a martini first for any ailment. Been working for decades for me and my siblings. smile
