Here is my wife's recipe for Sauerbraten, and she is as German as they get. One basic problem is that you started with pork, not beef.
Real German Sauerbraten
On my first attempt, I did want to ruin a good beef roast. I have read, most any meat, horse included can be used.
There's some spätzle. Yum.

I ate at an Edelweiss Restaurant one time. I had about as much clue there as I would have at a Modern Art Gallery.
I was spoiled while my wife made her Oktoberfest cookbook, as she had to figure out all the American substitutions, weights and measures for each recipe. She had to make the recipe on video and then photograph the results. Of course, all that good food could not be wasted! Then came the Christmas cookbook. Whew!
Maybe next time I'll use beef, and not be so cheap with the red wine vinegar.
NEVER go with noodles, make Spaetzle and brown in butter before serving. There used to be a decent German inspired restaurant in Tullahoma TN, but last I heard it closed. NOTHING else around now, that I know of.

Thats why Im glad the restaurant is 35 miles away. I remeber back in the 70's into the 80's up and down California back then you could find a type of cafateria style Hof Brau of some sort in any decent size town and many small ones,
All that food is simply LECKER! The first time I had Christmas with my wife, she invited me to her parents home in Schwabia (bis Stuttgart). I will just say this: The Germans know how to do Christmas!

I wouldn't mind her bringing me a beer or 3. I've made it a couple of times with venison roasts. Honestly there are better ways to cook meat than the way the Germans do in my opinion.
