I have a couple of marinades that I really like but I'm searching for new ones to try. What's your favorite homemade (NOT commercial) jerky marinade?

Here is what I use............

1 t. onion powder
1 t. garlic powder
1 1/2 t. black pepper
1 1/2 t. salt
1/4 c. soy sauce
1/4 c. Worcestershire
1/3 c. water 1/2 t. red pepper (optional)
1 basil leaf, crushed. (optional)

This is for 3 pounds of meat. I marinate overnight. The last batch was made with only half as much Worcestershire, as that's all I had. I couldn't tell any difference. I do not use the red pepper or the basil leaf, although I have eaten it with the red pepper and it wasn't too hot.

That is the same recipe I use but I don't add in the extra salt. Also sometimes I will put a little liquid smoke in there.
I do a variation off the above quoted recipe. We like a sweet jerky, so in addition to adding equal amounts of Worcester and teriyaki instead of soy sauce we add brown sugar.

I have already done a whole hindquarter and after spliting with daughter it only lasted 3 days! I usually let it marinate one to two days before hitting the dehydrater. Always taste your marinade and make sure
it has a "exaggerated" taste you like (sweet enough/hot enough) as the flavor gets milder when its dried.....IMHO. Good Luck!
Note re soy sauce: Use the real brewed stuff, not the hydrolyzed soy protein, chemistry set crap.
