Smoked meats that is ............

Jerky smoking weekend here, 46 lbs total and 5 flavors (marinated for 24-36 hrs). In the smoker for around 7 hrs total, smoke (hickory pellets) added at 90 min for around 60-90 minutes then drop temp from 170 to 160 for the remaining 4ish hrs. I also rotate racks a few times. Place all pieces in gallon ziploc bags for a couple days to allow moisture content to equalize between pieces then vacuum seal into small portions.

I have about 20lbs of sliced venison marinating in the fridge now for jerky. Should start dehydrating tomorrow. Afraid I don't own a smoker.

Very good!

My smoker is in the process of being built.

An old Norge freezer and a hot plate from Walmart. Not done yet.

My daughter is vegetarian, except when she's at our place, then she'll eat what ever we cook !!

Rooster, you jumped right in with both feet ! Doesn't seem that long ago you were inquiring about smokers & such.

Lol, I think the "vegetarian thing" came mostly from necessity - struggling adult student in big city (Toronto), but she sticks to it unless home !

Oh I bet!

Occasionally I buy a 1/4 of beef from my cousin. They are natural feds, raised on corn & oats, ground feed, corn silage and alfalfa hay. You sure as heck don't get flavor like that from meat bought in the grocery store!
