Been seeing a lot of pork belly recipes out and about.

I picked up a 5 pound chunk the other day. The guy at the meat counter had to ask his boss....


Was going to make a traditional English roast belly....then Roger posted up cracklins.



Well, they took the hide off it before they sold it....so no go.


Instead I rubbed it down good with rib rub and have had it on the grill with a pan of hickory for 4 hours.



Is this a waste of time? Looks and smells okay.....


Anyone cook a belly like this? How do you like to cook them?

Never ate pork belly like that. I do like cracklins, and will occasionally buy some. But, the ones we used to make when we killed our own hogs were a 100 times better. A good hot cracklin, dipped up out of that lard kettle was absolutely wonderful.

Speaking of lard kettles, I have the two that my grandfather had. Had our old scalding tub for a long time, but it got mistakenly tossed years back.

No skin ?

Had a big one with no skin that I put on the pellet smoker for a few hours then chunked up and pan fried. It was OK but really should have researched it a little more.

I've used it making sausage but I see no benefit over a nice fatty butt and my grinder hates it so I don't mess with it.

If I need extra fat I bum it from the butcher at the little grocery store in Orofino.

Good lord! If You're going to smoke it for crying out loud just add a little salt and maple syrup and call it bacon!

That's what pigs give us pork bellies for! There is no better use or higher purpose for a pork belly. NONE!

James,
Those old cast iron butcher kettles bring good money at auction,
if they aren't cracked. Make sure you don't let them get too rusty.

The seasoning from cooking lard always kept them nice, but that was
from one pig killing to the next.

Well, its really tasty!


Had it on the heat for about 5 hours.

Cut up into squares its great.


Maybe will try frying up some of the squares.

Billy Sim's BBQ place here in town had some back in Oct that was very good. Not a regular item had it about 2-3 weeks.

I buy it occasionally. Slice it about 1/4 - 3/8 of an inch thick and pan fry it like bacon taking care not to cook all the fat out.
Delicious. Just dont try to eat to much at once as it is mostly fat.

I've done pork belly burnt ends before and it was a crowdpleaser. Recipes online. Don't cook until tough IMHO

I've done a couple slabs on the smoker and enjoyed it greatly.

While visiting family in Idaho last year, we stopped in Paradise Creek Brewery in WA. Really good eats...and they had an appetizer called "Pork on the Cob." It was a piece of smoked pork belly served on top of a slice of cheddar and jalapeno cornbread with a mustard sauce. It was DELICIOUS. Definitely plan on getting that again the next time I am up there.

Been meaning to try duplicating it but haven't gotten around to it.

Costco has the best I’ve ever bought or have eaten. Theirs is thick and very meaty.

Costco has the best I’ve ever bought or have eaten. Theirs is thick and very meaty.

My cousin bought some from Costco in November and made bacon out of it. He made me up about 10lbs of sliced and 10lbs of 1lb slabs. Boy is it ever good chewin. I use it a lot in different things like braises ,stews and beans it really makes the recipes taste great. Seems like just the right amount of
Fat and meat.

The Gordon Ramsay and Marco Pierre White youtube videos for pork belly look pretty good. Has anyone tried those at home?

Paul, while you’re there tap on the window where the butchers are and tell them you want a package of their beef short ribs. They come in 2 sections in a heavy vacuum packed plastic. You won’t regret it. Best beef ribs I’ve ever had.

Key to pork belly is the braising processing and spices; Chinese Five Spice, ginger, sugar, rice wine vinegar. Otherwise look into a crispy pig recipe using pork belly.
