I'd forgo the potatoes and add in some cooked noodles at the end.

‘Goon- I’m new to this cut called the soup bone. It seems like shank to me, but honestly I’m not sure. When I had my STEER butchered, we went through it but I don’t recall.
What exactly is “soup bone”. I got a freezer full of a good bit!

PS....I'm not familiar with this cut but if there's really a soup bone involved French Onion Soup comes to mind.

The good wife wanted,potatoes, and carrots. Onion, and garlic goes without saying. Some pearl barley, a bay leaf, lintels, I hope it's good vittles.
