GrandDad always called them “hot cakes” instead of flapjacks or pancakes. And he always had those big old metal cans of Brrr Rabbit pure cane syrup that looked like a paint can to eat them covered in. 🤠

I've made sough dough pancakes for decades but we always called them "flippers". I also make a great buttermilk "flipper" that is quicker & just as good & it's light & fluffy & very tasty. And your treat for today is, I'm going to give you my recipe. First off though let me tell you that Ed, as you know is a very accomplished cook & has shared several recipes over the years, wish I had saved them, dang it!
Ok, if you're ready to make some REALLY good "flippers" You're going to be surprised by one ingredient that's the real key to making them....Rice flour! I buy it bulk at a local super market like I do many things that we use. This recipe will make about 12-14 flippers, depending on size, I make them medium size. BUTTER MILK FLIPPERS

1 cup all purpose flour---- 3/4 cup rice flour
1/2 tsp salt---- 2 tsps sugar----- 1 tsp baking soda
3 tsps baking powder---- 2 tbls oil----2 lg eggs
2 cups butter milk

For waffles this is about the right texture but for flippers its a bit thick so I cut it with a little bit of regular milk so I don't have to use any more of my quart of butter milk.Let stand a few minutes to blend & then cook just like a regular pancake. You will notice a very different flipper, enjoy!

Pancakes and waffles waste valuable stomach space where bacon, sausage, eggs and biscuits could go.

Pancakes, bacon, two eggs over easy, syrup and real butter. One of my favorite meals.

The only way to make it better is to sub french toast for the pancakes.

Waffles, pancakes, french toast is the proper heirarchy of breakfast carb overloads. French toast rules them all.

Breakfast carb overload is exactly what I do not want. May as well go back to bed to ride out the sugar coma.

I like pancakes, and I like eggs, but to put them both on the same plate doesn't work for me.

Exactly. Breakfast carb binges are a splurge for me and very rare, usually only on a vacation or maybe over the holidays.

Same thing with ice cream. I don't understand the current fad of "lite" and "diet" ice creams. If I am gonna eat ice cream, I'm going full hog on the stuff. Give me the full fat, sugar overload, Fat Boy Sundae with extra sprinkles.
