I use it as a base kit when I make chili, but I add in a lot of things, such as lots of carmelized onions / jalapenos, minced garlic, a couple of beers, extra chili powder / paprika / red pepper.

Big fan. If you do add the whole cayenne packet it is a bit spicy but I do like others and use it as a base but it's one of the spice mixes I like.

Added both packets and found it to be very bland. Maybe the spices were on the Mayflower when it hit the beach ???

Well my friend, maybe that's why they say "to taste" grin Could be I've just caught my wife's Irish stomach and not as used to spicy anymore. You could certainly be right about the shelf life though.

I too find the Shelby kit to be bland. The Wick Fowler's Two Alarm has more zip.

This is the best I have had. In fact, I don't do the homemade thing anymore. I get it in Johnson City.

I like the 2 alarm chili seasoning better than anything else. I use everything but the salt. I measured out the spices in the kit years ago and use it for my base chili recipe.

My grandmother used to buy one of the premix chili package kits back in the 1980's called Chilibowl.

Believe it was a Texas product.

Damn best nonhome made chili flavor.

Chili kit? Really? Buy spices where the Hispanics shop and don't buy the overpriced little can spice rack type. Idea is to buy the freshest available, you don't know how long the stuff has been in a warehouse or on the shelf in an Anglo only store. Really makes a difference for chili powder. Carol Shelby's was ok, the only thing unique was the little packet of masa to use as a thickener. That was years ago but I suppose it's still the same stuff.

If you'd like to experiment with different peppers an Indian (dot) store is a good place to try as well.

I like to use a moderate chili powder, I'm looking for flavor. Can always up the heat with what we called a Christmas pepper in North Texas. Pretty little ornamental plant with many small peppers that change color, green - purple -red. Hotter 'n hell. Thinking NuMex Twilight or Centennial 30,000 to 50,000 Scoville. I expect the whole NuMex line is just as hot. Centennial, Twilight, and another from them all cross pollinate.
