No doubt pretty common knowledge......but if you slice a deer heart and then soak it in buttermilk before you bread and fry it..............even people who dont like organ meat will eat it. Enthusiastically.
That is all.
Love deer heart !
Even got an unappealing picture;
Half gallon of buttermilk always goes to deer camp. Aint NOTHING better than buttermilk soak offal from a fresh kill.

how long do you soak it in the buttermilk?
It was in there for 45 minutes or so.
Less than an hour anyway.
I always slice and fry deerheart at the first opportunity. I don't soak it in anything. It is my wife's favorite part of the deer.
I always stuff it with croutons then bake it in a covered dish. Slice thin for sandwiches.
Deer heart and liver cut into tiny cubes and sautéed with olive oil, white wine, onions, salt and red pepper flakes is a favorite.
