My nephew tried that one Thanksgiving several years ago. Damned near burned down his house. After that, his wife said from then on, they'd just use the oven.

I've done a bunch. Going to do one Friday. Always do it outside, and never had an issue. They're good that way.

Best way I have ever eaten Turkey.
Roasted is good, love the gravy and stuffing, but
the meat is better fried.
When you cook one, let it stand vertical a while to drip dry.
Dry it with paper towels as good as possible, moisture is the enemy.
Nobody reccomends this, I started doing it, an it's my process now.
I put a lot of oil in the pot, bring it too temp.
Take a big pot, and fill it with the hot oil using a smaller one as a copper.
Put the racked bird in the cooking pan slowly. Watch out, the body cavity
will act as a venturi, shooting a hot oil fountain.
As the oil settles, replace the oil you dipped out.
This makes a couple dirty pots, as there some risk in handling the hot oil.
But, you won't have any shooting out of the pot,
Or end up guessing wrong, and not having enough.
Some sink the bird in water in the pot and then measure the water.

It’s a very good way to cook a turkey. I don’t know anyone who has ever had issue.

At the time....they are delicious.
But the whole process is messy, expensive, inconvenient, dangerous......and the leftovers are not near as good.
For a big bunch of folks who will consume the whole bird? Its perfect!
We use to do a peanut oil fried turkey at Thanksgiving until I got a Big Easy Turkey air fryer. Much simpler without the oil and everyone in my family says they are just as good. I inject the turkey with cajun jalapeño butter then mix my seasoning into squeeze better and rub under the skin of the turkey. Halfway through I baste with a garlic, seasoning and butter mix.
Lot less mess and safer.
I didn't know they made air fryers that big.

The whole low-fat diet bullshit was a hoax by the AMA with zero science behind it. Not bad science, not questionable science, NO science.
They admitted so a couple years ago. It was only about marketing and milk fat sells and sells well. Getting the dregs sold takes more effort.

Next door neighbor, maybe 20 years ago is deep-frying a turkey.. on his deck. Decides he can drop the turkey into the hot oil and get away from the splash. Then the turkey hit the oil and all Hell broke loose. The turkey frier stand broke, the pot tipped, and hot oil went everywhere! People were burned badly and oil made a huge mess.

Some folks likely should stick to electric ovens and Velcro shoes though as the potential for disaster certainly goes up with open flames and many quarts of hot oil.

Other than smoked a fried bird is the way to go.
Oven or roaster pan is a good way to completely fugg up something that can actually taste pretty good.

I have deep fried maybe 6 birds.
They were always good and well received.
The danged oil is expensive, and gets pretty stale by the next time I want to do it.
For big groups I like it.

Deep fried another turkey and house didn’t burn down.. I use the butterball deep fryer. Not a hot pot with 10 gallons of oil and using a 2x4 to Lower the turkey into the hot oil..
I have had pretty good luck straining the used oil thru a funnel strainer when it cools. Put it back in the jug and keep it cool. It will last and you can use it over and over for several months.
Have never used peanut oil.

Well, I won't be deep frying the bird after all. We're having our turkey meal today, and wife decided to just roast it in the oven. It is a 20 pound bird, and that's really bigger than I like to deep fry, as I like those around 10-12 pounds or so. Now, I've got all that peanut oil I bought just sitting there. It won't go to waste, as we'll use it for frying fish, chicken, and probably a smaller turkey.

James makes a point, over about 12# and your bird gets too thick.
It will not cook properly.

In-laws raise big roasters, they brought one over and i fried it.
Beautiful when I pulled it out, nice and golden brown.
And raw as, (I'm being clean here, won't say it) it was raw inside.
We popped it in the oven to finish, and it was delicious. But not
for that days supper. Lucky, we always cook extra,and a bit.
There is a reason that fryers are called fryers.
Someday, I want to try frying whole fryers. Might work.
But, they cost more than cut up cluck. So I would have to
pay too much, to possibly screw up supper.

We fry boston butts, they are better than turkeys and I really like the fried turkey.

Yes in tight blue jeans! Any way have done it a couple of times and was surprised how well it came out. A local Vietnamese restaurant serves deep fried beef with a garlic chili paste Yum!
We used to filet the breasts. Inject with cajuan seasoning then slice in strips. Make a coating of onion soup packet in flour and roll the strips in this and then deep fry.

I just saw this thread as I gave yesterday the day off. I have fried maybe 100 turkeys with no incidents. Done as many as 11 in a single morning-‘course I have a big pot. A really big pot. I can fry three 20lb birds at a time no problem. Just thaw them good, pat dry, use a good cable to lower them in and wait. Never been close to burning down the house, lol.

Couldn't deep fry this year due to the wind. Roasted using the Alton Brown way. 500* for 30 minutes then turn tye temp down to 350* for 2hrs. Perfect bird!
