Do a search for 2 books, "Gingerbread-things to make and bake" and "Gingerbread for all seasons". Wife uses them, lots of good stuff in there.

Wife always buys a gingerbread house kit for the grandkids to put together. They started it Thanksgiving, got it about 75-80% done, and it's still sitting here.
