My very good friend , (Denver native) made a green meat sauce for burritos that was outstanding and took about 2-3 hours to make and simmer to just right. He died before I could get the recipe, but it was an old recipe from his Dad's firehouse, his Dad was a captain with the Denver city fire department.

I know the meat was chunks of pork browned but thats as far as I know. Don't know if it was green because of chilis or tomatillos, it wasn't overly hot but a real nice smooth medium heat flavor.

Anybody got anything similar?

Chili Verde? I use a recipe very similar to this and it is time for a batch - https://www.simplyrecipes.com/recipes/chile_verde/. -- I don't use the cloves in mine.

Plus Mexican oregano, cumin, garlic, black pepper.

Brown pork, add the above, simmer 'til tender.

Done.
