For me, either our family legacy of sausage, kraut, HB eggs, zelodic, potica...

Or, lamb shank, leg of lamb

Ham

Salmon

all i can think of right now
We usually have ham loaf, but with the kids not being here, I don't know what the wife and I will do.
could go exotic...tandoori chicken, butter chicken, doubt it though

But, I will make either egg noodles or italian bread on Holy Saturday
One thing is for sure , you probably will not be going out for Supper.

especially since i've never done that
I doubt if we have any company in. Nothin' fancy.
Ham and cheesy potats.
I was actually thinking of cheesy potatoes for a side, very popular on Easter
We're thinking either lamb chops or osso bucco. Just going to be the two of us.
Easter comes only once per year.
Rabbit, I freaked my kids out one year with this treat.

so you have digital files of the future?
Nope, just know what we're doing.

Being tradition, & all ................
ok you're locked in now, no changin anything and watch yer portions
corned beef, cabbage and taters. just the household this year and 2 out of 4 aren't big fans of ham.
It's just the wife and I so I picked up a four bone rib roast. Prime rib, roasted parmesan potato's and asparagus with a balsamic glaze. I will bust out the slicer and shave the leftover prime rib for french dip sandwiches. This will be the first time in my 57 years on this planet to not worship and celebrate with family. It's going to be strange for sure! Have a blessed Easter everyone!

Mike
What kind of slicer do you have?
Going to do a brisket, got it thawing out as we speak.. far as a side probably good ol potatoes.

This one. Got it two years ago and like any other slicer it's a pain in the ass to clean, but I've been been really happy with it.

Cabela's 8" commercial.

Damn that looks good!! Since it's just me and the wife this year I told her not to futz with them. I'm starting to wish I would have kept my mouth shut. Her standard eggs are great, but she makes a spicy version I can't get enough of. She puts extra hat horseradish and a touch of Tabasco in the yolk mixture, places a pickled jalapeno slice in before filling then lightly dusts with cayenne. Not for everyone...but they float my boat!!

looks like we had the same idea, fats...

Beer can chicken on the Weber......

Wild rice & gravy.....fresh asparagus ($1.88 lb)

Had some nice Ribeyes last night........fresh 'tator salad.....more asparagus.....
Grilled leg of lamb, smashed rutabagas and roasted asparagus. Lots of champagne and red wine for me and mamma. Happy Easter.
Aforementioned lamb

Them young fellers coming around would be very, very lucky to win one of your daughters Fats.
Leg o lamb on the Weber. Made a rosemary fennel rub for it.
Bakers with bacon, sour, butter, and cheddar.
Grilled asparagus.
Mediterranean style salad with a bit of feta and vinaigrette.
Deviled eggs.

Everything was great except the asparagus. Costco asparagus is routinely sub par.
Thanks Jim.
Completely untraditional this year. I smoked up some pork baby back ribs, momma made homemade mac n cheese, and baked beans on the side. Not too bad.
