Are cameras like Sony's RX100 & RX10 or Fuji X-100 able to handle rough handling and a little weather typical of a hunting trip? Seems kinda expensive to have one crap out on day 2 of a 2 week trip.. Any experience here?
I'd look at the olympus TG6.
I've killed two RX-100's hunting; a mark ii and a mark iv. For a while I was getting beautiful hunting pics.

Obviously the two main camera killers are water ingress and impacts from being dropped. Cameras with built in zoom lenses are usually the worst.
Look for cameras with a "weather resistant" rating and if it works stick with fixed focal length lenses, they are tougher than zooms in most cases and some are rated weather resistant as well.
Get a GoPro unless one wants to get into 4 figures.
