I have these two knives that a local guy made for me. I absolutely love them, with one exception...I don't like the high glare polish.

Can I do something to knock the shine off? I really like the "brushed stainless" look of some of the knives I see, but I have no idea how to get that look with these.

Can anyone help me out?

Or you could go to the pot section of the grocery store and get you the finest scotch bright pad you can find. Rub flats length wise and hollows top to bottom. Wrap pad around something to prevent you from getting cut.

I had thought about glass bead blasting it, and actually talked to my gunsmith about doing it.

I would rather have that brushed look though, so I will try Mike's suggestion.

Todd easiest way is to put the scotch bright pad over a sharp edge and put it in a vice. Stick the blade near the guard and drag the knife blade out to the point on both sides. This will keep the finish straighter looking

Well, I tried various ways with the scotch bright pad and got nothing...

Maybe I'm using the wrong thing? The only scotch bright pads that I could find locally are sponges with one side rougher than the other.

No but you may have to go to eBay for scotch brite pads.

Check the hardware/paint section of the big box store if you have any in your area.
Local hardware store should have them also.

You're talking the steel right? I've taken 400 grit emory paper and placed a "drag" finish on a blade. Folded the paper over a popsicle like piece and dragged it from handle to tip OR place the sheet on a flat surface with a sharp edge. Using caution to maintain even pressure and always make full length passes. Free grit will occur so you must keep the back surface clean or tape the back side to prevent swirls. It didn't take all that long and came out acceptably well. It will reduce the value of your knives but the glare will for sure be reduced. This is clearly a Bubba approach.

I would bead blast it if those were mine.

The metal will oxidize with time and make the scratches less noticeable. You may want to start with 600 grit
