Some want to sharpen by hand and want a stone that can get the job done even on the Super Steels. I know of a few here that have already bought one. Some here actually are interested in all things knives. If it doesn't apply to you so be it.

800 grit Whetstone Splash and Go.

Is 800 grit fine enough or do you finish with another stone?

Depends on what type of edge I want. But I always finish on the strop.

Edit: 800 in general is good and then strop with 1 Micron Diamond spray for all the general Stainless.

If I want finer I move to the CBN's. The higher grade Stainless can hold and retain a much finer edge.

Please realize that the Jap stones such as these Matsanuga (King and Sun Tiger) are graded to JIS R 6001:2017...which depending on product = from 16 to 20 micron average... I have both as bench stones and the 800 and 1000 wheels for my Tormek and will state unequivocally, since most users here seem to be EdgePro fans, this is close to the 400...and closer still to the 600 for WEPS fans...
