Don't have any experience with Ireland for wingshooting but my dad went there for Snipe and Woodcock in the 1970's and loved it. However, I have decades of experience in the UK and, IMHO, you'd be far better served in England for what you're wanting. gunsonpegs.com is where I would look if I were to travel back to the UK for wingshooting.
I'd look into what kind of shot they require. If they've banned lead, I'd probably roll with a 12.

When are you planning to go? Last I heard they were under a lockdown with very little if any tourism allowed.

Be prepared to have a darn good time if you make it over there though.
