Does anyone have any experience with with red stag hunting in Italy ?
Any recommendations on any outfitter or hunting group that books hunts or maybe a private guide who can take you out for red stag ?

I suggest contacting Worldwide Safaris; they're based in San Diego but are booking agents for nearly everywhere. About 20 years ago, I hunted fallow deer and red stag in Spain for a fair price. Worldwide Safaris booked the hunt for me and I had a great time!

Lots around Val Susa (Piemonte) and Lombardia generally. In fact across the northern areas. Hunting opens around the end of SEP. Sounds like Kosovo etc esp in Croatia and Slovenia. Can buy shot game meat incl wild boar at many macelleria and modest restaurants serve game meat at abt USD 25 and lots of it!
