I smoke carp with pressure treated framing lumber shavings and sawdust, with chunks of RR ties, thrown in.
Brine in left over pickle juice. But NEVER for more than 2 days.
Then I sell the carp to Costco……………………….
In Anchorage…………………..they think it is cod.
