I've used the compound butter with halibut, it was excellent. The thing with good fresh fish is you really don't need to add much seasoning to it: salt, pepper, bit of lemon or lime and you're gtg. Also try adding some sesame oil, love that stuff but don't get carried away.

Shouldn't be a problem bringing alder on the plane. For me it's just as much the smell of alder as the taste, and to me it's one of the best smelling woods to burn.

I'm kinda partial to these guys in the summer.
