In Taiwan I eat a lot of duck eggs and in MN I ate a lot more of turkey eggs(bought them by the case. But goose eggs have eluded me. I imagine scrambled with chive, salt and pepper and a little soy sauce would be great, that's how the duck eggs were.prepared, in fact they replaced chicken eggs in most.recipes.
