There are almost as many versions of Bum Sick stew as there are chili. Pick one that suits your taste. The only tip I would give you is that, as with most recipes, the simpler the recipe the better the dish.
Be careful of game fat if you use game meat in your stew. I generally use a bit of salt pork for the fat.
