A guy in my camp bought a deer processing business earlier this year. I killed a 90 lb maiden doe with my bow mid October. Since I already had a bunch of meat in the freezer I went for something I had never had, smoked boudin. I had the whole deer done yielding 104 lbs of pure eating delight. I had not considered they mix deer/boston butts 50/50 then add a equal amount of rice.
