Nice pictorial - exactly how I do it with two exceptions - I hang my deer head up. smile And the plastic wrap step can be done with one piece of plastic if you start at a corner with the meat set diagonally. This lets you wrap the length of the meat and fold in the ends all in one step. But you're obviously doing it right - to each their own.
