I second the recommendation of fillets made by Paul LeBatard. I bought one of his standard fillets and then quickly turned around and got one of his small fillets. Both have beautiful hollow grinds and distal tapers on ATS-34 blades. The large is has a 6.5 inch blade of 1/8 steel with moderate flex, the small is around 4.5-5 on 1/16 steel and is very flexible. They are scalpel sharp and hold an excellent edge. After a deer or cooler of fish they are still extremely sharp and a couple swipes on a ceramic rod bring them back to shaving sharp.
