Were pretty lucky as to green chile. We have Hatch green chile delivered locally to the stores and they roast them outside. We chop and mix up the chiles in burger and cook the patties over mesquite. That will spoil you.
Old friend who has since passed away boot legged a trailer of mesquite to me. Damn I miss that reprobate! Best friend a man could ask for.
Used to see fresh Hatch chilies here once in awhile but most were gougers. The ones in the cooker weren't as good as the ones on display. Learned my lesson. Grow my own now.
