Hope shoots a 7mm-08ai (24" barrel), and I'd been planning on her using the 120 gr TTSX for our next elk hunt. She has used this bullet for several years with very good success. This is her gun with a stock sized to fit her 5-3 frame, and she shoots it well. Am I over thinking this?

You answered your own question. If you mess with her rig you may mess up her hunt. Leave it alone.
If you consider the bullet to be a little light, it won't hurt for her to keep shooting until he stops moving.
