The wife picked up some large chicken breasts so I thought I'd give them a whirl on the charcoal grill/smoker.
First I made a rub of a few different spices from the cupboard.
I then soaked some cherry wood chunks in water. Then built my fire on the opposite side of the grill from the chimney stack.
I placed an alum water pan above the fire and one below the chicken. Next I put the cherry chunks on the coals and shut the hood for just shy of 2 hours. Then I glazed the breasts with a Raspberry Chipotle sauce and shut the hood for about another 10 minutes.
It turned out incredible! These things were dripping juice when cut into and the raspberry complimented the smoke perfectly.
A couple days later we had all the kids home with some friends so I made it again. They devoured it.
