This three bone short rib plate weighed in at 6.5 lbs so I'm thinking I'll be full this evening while watching the Coke 600. I'm trying to do this one without using the crutch to save the bark since I still have teeth that can chew through it. I'm learning these dinosaur ribs like to be treated as brisket.
