My interest in the technique was piqued when the first two cuts were vertical behind the pectoral and behind the adipose. The filet was 'trimmed' to about 2-1/2 inches from D/V.

While I appreciate the continued response, I posted days ago that the fish weighed 21 pounds. Probably long since been reduced to sewage...
