That Moki 458 posted looks really good. I've the Kershaw as well, and that looks to be a fixed blade version. WELL worth considering, if so. I also have the Kershaw and am really liking the looks of that Moki...

I just got one of these on a whim and must say, its a damn good knife. Its a good all around knife too so you could use it more often than just for hunting. Checkout battlehorse knives. First rate quality. They have several hunting size knifes in the 100 buck range. I just ordered their latest offering the frontier american. Battlehorse I never thought much about spending a lot of money on a knife. Figured anything cheap that is sharp will work. Then I bought a high quality hand finished premium steel knife. A smaller battlehorse, the frontier first. It started a new disease. Like handling a high quality rifle you just don't want to put it down.

Another vote here for the Eggen or another Helle. Or a Mora 2000. The Scandinavians have proven to be great knives for me. Ragweed Forge has a bunch of nice stuff in your price range or less.

For utility, it would be hard to beat a Mora that costs $25 or so. Really, they are excellent. There are other Scandanavian knives under a hundred that look nice.
$100? 5 Moras. Hard to beat the versatility of the Havalon Titan for a great hunting knife well under $100 Havalon Titan I had not seen one of those. I boned out my elk this year with a Havalon Piranta. They are fantastic.

If I was to buy another knife, right now it would be the Havalon Titan mentioned previously. I love the sharpness and size of the scapel blades for a lot of work, but also really like a beefier blade for some other jobs. Having both in one package would be nice.
If that's not your cup of tea, I suggest the S30V offerings listed above. That steel gets SHARP and stays that way for a long time. The Buck listed by MuskegMan is a shape I think I could like a whole lot. The Crosslock that prm linked would be nice as well. Mine's the Cabelas branded Buck 110 with the S30V. Very nice, I just wish it was less pointy.

In the late 80's/early 90's, I had a total of three Bucklite 422's given to me as tips from clients. Wasn't too sure about a plastic handled folder, but eventually I gave them a try and loved 'em.
6-7 years ago I broke the tip on my blaze handle one while extracting the ivorys on a client's elk. Man was I pizzed.
I shipped off the knife to Buck with a letter explaining what happened, asking them to call me if there was any charge.
About 5 weeks later my knife arrived with a new blade.
That kind of warranty/CS earns a bit loyalty from me.

For skinning I am absolutely in love with the Victorinox Lamb Skinning knife. I learned a lot using a Russell Green River Sheep skinner. The old butcher that I learned from always used them for skinning out the head, legs, and gutting when out in the field, custom butchering. I still have two or three that He and his Son gave me including one that is brand new and never been used. miles
