When I was framing, some cheap-a$$ builder had us
putting 3\8 plywood on 24"center trusses. Me and my
partner (cro magnons) had trouble not bustin' thru the roof.

Ya. I've never seen a roofing crew around here that spoke english. I don't think this is on the crew though. The contractor knew that if it needed decking replaced the insurance would cover it.

It appears the roofers did a good job considering what they had to work with.

Every roof I've ever had done has been like playing whack-a-mole trying to make sure everything got done right.
This one was no different.
I'm steamed about it because I told the guy it needed decking at least 3 times.

My thoughts exactly. With 40 some years in the construction and maintenance business, I have done 1 or 3 roofs, and seen some of the gawdawfullest installations you can imagine. That looks like a classic !

I am doing a lot of roofs right now- I just do the repairs and let the actual roofers do the final part. Just did a house with 3/8 sheathing for a member here. I sheeted over the whole roof with 1/2" OSB and then the roofers shingled it. It would have been wavy but not that wavy.
I'll bet your shingle manufacturer would not warranty that roof. Looks good but isn't right.
