Tonight was stuffed zucchini and sliced tomatoes. Great as usual.

Last night I had a piece of fish dusted with Zatarains Fish Fry and pan fried in butter along with a couple of tomato's fresh out of my garden....sliced and doused with Ital. dressing....

It was so good I'm having the exact same thing tonight.....

Tonight, spaghetti squash alforno. Bacon, onion, garlic. Microwaved the squash, tossed with a little butter ( not margarine) and some fresh basil and parmasan .

Resisted the urge for a second plate!

I made stuff Zuke tonight. My version anyway.

Sautéed half an onion in some OO. Threw in 1/2# of Hamburg and a 1/2# of mild Italian sausage.

Split some zuke length wise and hollowed out with a spoon.

Added zuke guts and a can of chopped tomatoes to the meat mix. Toss in some rice, maybe 3/4 cup, and a bit of water. Cook until rice is done. Add water if needed.

I steamed the zuke hulls in a pan for about 8-10 minutes. Spooned the mix into the zuke, topped with mozzarella and cheddar, onto a sheet pan and broil until nicely browned.

I just used a bit of Italian seasoning, S&P, red pepper flake, garlic in the meat mix.

Came out great.

Fried squash and onions, limas and butter peas, baked potatoes and zucchini with seasonings, fresh tomatoes and onions and crispy cornbread and sweet tea.

Rub it in ya uppity fugger.....I'm having a grilled hamburger steak (can't afford buns), some store bought ranch beans, and a warm beer.....





To be honest...the burger has diced bacon and Anaheim's fresh from my garden and cooked on the hibachi and the beer's actually cold but I'm eating on the deck and it's 95 so it'll be warm soon enough....



BTW.....I'm wearing out that new Lodge Hibachi I bought last spring....I love that thing....

Hah!

That Lodge Hibachi looks pretty fuggin sweet! I definitely need to get one.

BTW- tonight was no better. Maybe worse?

Left over night.

I cut up meat off left over ribs, added left over zuke stuffing, a chopped up hot dog, and added it to a few scrambled eggs. Topped with cheese and doused in Crystal hot sauce.

I had six neighbors over and cooked carnitas, Spanish rice and pinto beans. It was darn good with zero leftovers.
