We tried something new[yet old] last night.

Lite bread cut[with a glass] to fit in the bottom of a muffin pan. One cooked[not crispy] slice of bacon wrapped around the inside on top of the bread disk, enough cheese inside the bacon[on top of bread]almost to the top and then topped off with an egg and some green onions.
Oven @ 400 for 15 minutes.

dang tasty and no pics.

We did one of our easier and tastier meals last night and I ate it for lunch today.

One bag of frozen chicken breasts, usually 5 breasts in a bag.
One jar medium or mild salsa
Half a tablespoon of lime juice
Teaspoon each of cumin and chili powder
Can of black beans
Bag of fresh spinach
One Avocado

Thaw and trim the chicken breasts and place either in a crockpot or pyrex dish. Pour salsa over the time and mix around. Cook either 3hrs on high in crockpot or 45min at 375F in oven. When there's about 15min remaining, mix up the lime juice, cumin, and chili powder and pour over the top. When it's done, shred the chicken into bit-sized pieces, leaving it in the dish/crockpot.

Ladle the chicken/salsa mixture onto fresh spinach and add a few tablespoons of black beans. Top with avocado and light sour cream. Makes a jam-up good tex-mex style salad with lots of protein and minimal carbs. My kids dig it also with a few tortilla chips crumbled over the top and a bit of shredded cheese.

And it's still: over the top and crunchy or nuthin! grin

A buddy of mine and I made fried bologna sandwiches for a friends wedding about a year and a half ago. 3/8" thick, grilled onions, with all the fixings, chili beans, and a green salad. DAMN was it good.

Bride and groom went with camo and pink, outdoors at the Woodlake Rodeo grounds. One of.. The best wedding I have ever attended. When the pastor said you may kiss the bride, he turned to us and yelled "cut'em boys"! We emptied a 44 mag, 45 acp, and two 12 gauge shotguns!

Best part was we presented the bride with pie, proclaiming cake gave every women lock jaw!

Even the pastor had too many beers from the wash tubs!

It's convenient for the winter I can wheel it in and out of the garage,then wheel it to the back patio in the summer
