Tonight I am having Porcupine Meatballs with a huge green salad.

Ingredients

1 Pound Ground Beef
¼ cup uncooked long grain rice
1 slightly beaten egg
1 tablespoon parsley, chopped
¼ cup onion, finely chopped
½ teaspoon McCormick® Garlic Powder
¼ teaspoon McCormick® paprika
⅛ teaspoon McCormick® Pepper
½ teaspoon salt
1 (10¾ oz) can condensed tomato soup, divided
½ cup water
2 teaspoons Worcestershire sauce

Instructions

In a medium sized bowl combine meat, rice, egg, parsley, onion, garlic powder, paprika, pepper, salt and ¼ cup tomato soup. Mix thoroughly and shape into about 20 meatballs and place in a skillet.

Mix remaining soup, water and worchestershire sauce. Pour over meatballs. Bring to a boil and reduce heat. Cover and simmer for about 35-40 minutes stirring often.

Kind of, kind of nostalgic, soup can recipes, the only way my Mother could cook, well, sort of cook, thank God my Grandmother lived with us, that woman could cook, and she spent a lot of time encouraging my Mother to take up other interests ! smile

Going to be very unsophisticated here - hamburger soup made with beef stock that we saved from sometime or other and just found in the freezer and whatever vegetables turn up in an exploratory expedition into the depths of the 'fridge.


Not a real member - just an ordinary guy who appreciates being able to hang around and say something once in awhile.

We absolutely love hamburger soup at home. My oldest insists on potatoes being an ingredient, and the youngest adds a handful a tiny pasta of here choice. A steaming bowl of the soup and crusty bread or rolls slathered in butter, and they are a houseful of happy campers ! grin

I was doing something similar a few weeks ago. ( I think I was adding turnips to my bean soup ) My mom commented she had an Aunt that used to make Saturday Refrigerator soup. Whatever was left in there from the week went for a swim! Said it was pretty good more often than not. Definitely a great way to utilize what you have and cut down on waste.

Lynn, those porcupine balls sound pretty good. Kinda a tomatoishy Italian wedding soup or Albondigos.

Panera Bread it is my FAVORITE !!!!

I love, love, love, their Tuna Salad Sandwiches, along with their broccoli cheddar soup, with Blueberry Pomegranate Smoothie !
