Dan is the brisket master! I am still waiting for the pork to be processed. My in-laws are anxiously waiting. My father-in-law actually respects the fact that I got it by hunting.

I make jerky every year from venison. It's amazing how many folk that say they don't like deer meat ask me when the next batch of jerky will be ready. Pretty much the same with both breakfast sausage and smoked links.

Have yet to try the tenderloins. Donated the rest to the local food bank. They were very much appreciative of the donation and said it was used for easter dinner. Fed 60 needy people in the letter they sent confirming the donation and use of the meat.

I swung by Uvalde today, and picked up my pork. They do have a pretty impressive operation. Good sized building, and they are also a retail meat market, not just a wild game processor. You can look into the meat cutting area, and it appeared to be very clean and well organized.

I've not been to Uvalde previously. They have a place there on the main highway called the Oasis, which is sort of a mini Cabelas and Buc-ees rolled into one, but with a sit-down restaurant in the middle of the store. They had a good gun shop, with reloading supplies and a decent selection. They had Model 70 I'd not seen before; a Super Grade with a maple stock (quite nicely figured, too). It was a Portuguese model in .270; with 22" barrel (bummer). Were it a 7x57 I might have bought it.

Dan--I know it's early but do you think we're headed back to Pricky Pear next year? I know I really liked it there. Plan on probably doing a trip by myself.

I'm hoping so trying to work things out with Kevin the owner,I should be able to secure the booking but we had a few issues that occurred that Kevin needed to address with me. I really don't want to get into them as to not call anyone out but let's just leave that I sent Kevin some $ to cover the "problem(s)"
I should have everything patched up and we will be invited back next March
