Got a big one in the freezer and it's getting nice outside for grilling.
What size plate do you folks prefer.? One grind or two.? Add fat? Season the mix during the grind or wait till it's grillin' time.?

Plate size? What ever you like. Course grind for chili, finer for burgers . If it is a commercial packer it most likely has enough fat, if not, add some. 70/30 - 80/20 works best for burgers. I wouldn't season the grind unless you have a special purpose for the whole lot.

Thanks guys. Just grind it like you would any other ground beef meant for burger. Salt and pepper and make the patties UBER thin and large in circumference. I like to throw on a slice of good Swiss and serve it on thin buns with sauteed onion. Arguably the best fugking burgers you can make. Travis

Little tiny "packers" were the norm here if they even existed at all till the discount grocer started taking orders. Now I can buy 16-18 pounders out of their walk-in box and separate them for multiple cooks. I'm in heaven. Don't think a jewish deli will fly here in WV but I can dream.

You can get packers at Sam's 12 months a year. In fact they keep all of the four KCBS meats year around. They rarely have Prime grade packers like Costco, but who needs Prime for grinding or back yard bbq?

Sam's is 2 hours away for me but I'll check when I'm up there to buy boots nearby.WV is a culinary wasteland for a many food items.Fair amount of retired folks from other states here and all bitch about the lack of some of their favorites.

California must not suck as bad as everyone says. I can can go to two butcher shops and at least three grocery/supermarkets and get packers. All within a fifteen minute drive. Does every one of them have them every day? No. But one or two do and the others get delivery at least twice a week. Plan at least three to five days ahead and good to go.

Back when you could buy 15 to 18 lb packers for about $20 to $25 I ground a lot of them for burger, but now if you can find them they are $55 to $55 to $70 for the same size so it ain't real practical any more for burger. I just buy a half a beef off the neighbor every year and go heavy on the burger. Bill
